Y’all that know me, know that I love, love, love Hatch Valley green chiles. My family puts them in everything including eggs, mashed potatoes, soups…. Don’t be surprised if I bring out a Hatch green chile ice cream at some point! But one of the most classic Mexican side dishes is the perfect place for these flavorful chiles.

This is my absolute favorite side dish when I’m serving Mexican food. Forget plain-old canned refried beans. Ten minutes of prep time and a few hours in a Crock-Pot and you have a healthy, homemade side of refried beans that will knock your socks off. And, as a bonus, you get to bag it up and store it in the freezer for the next few times you need refried beans as a side dish.

All right, it’s still freezing all around the country, so I’m sticking with homemade soup a little while longer because that’s what we want in this weather, right??  Every cook has a broccoli cheese soup recipe — it’s kinda like chili — it’s personal. But here’s a not so typical broccoli cheese soup option with some not so typical cast of characters. Carrots, for a really nice texture, a hint of nutmeg for some exotic sweetness, and red pepper flakes for just enough kick. Plus, this is for the slow cooker — and you know how I feel about that — put this on when you leave for work and dinner’s ready when you get back. Add some crusty bread, oyster crackers or just good ol’ saltines, and you’ll be nice and warm AND nice and full!

Go inside the Man in Black’s home on wheels.

When you are country music royalty, you travel like country music royalty. Johnny Cash’s tour bus, known as “J.C. Unit One,” is on display at the Rock and Roll Hall of Fame in Cleveland, Ohio. Assistant Curator Meredith Rutledge gave Great American Country’s Celebrity Motor Homes an inside look at one of the most luxurious coaches from Cash’s era. Johnny and his wife, June Carter Cash, spent more than $500,000 to customize their rolling space.

“The first time I walked into this bus, I really had a sense of the dignity — and a sense of the fun — that was had here,” Rutledge said. “It’s so amazing to be on this bus and to actually be in the places and touch the surfaces that not only Johnny and June, but Waylon Jennings and Willie Nelson, relaxed in. I really don’t have words for it because it’s such a thrill. There is so much history in this bus. You can feel it.”

J.C. Unit One features a front lounge, where Johnny and June entertained, and three private rooms. Since the rest of the bus was private, the lounge served as the only public space and a gathering area for the Cashes and their famous friends.

Eric Church topped the charts with “Talladega,” while Carrie Underwood held strong at No. 2 with “Something In The Water.” After two straight weeks at No. 1, Blake Shelton and Ashley Monroe dropped to No. 3 with “Lonely Tonight.” Underwood’s new video, “Little Toy Guns,” moved from No. 20 to 13, while Brantley Gilbert’s latest video, “One Hell of An Amen,” entered the chart at No. 20.
