You may know Krystal Keith as the singer of the sweet father/daughter wedding dance song, “Daddy Dance With Me,” which she wrote for her own wedding as a surprise for dad Toby Keith. Or maybe you know her from her official debut single, “Get Your Redneck On.” [Get it here!] But did you know she’s also super talented in the kitchen? Krystal’s been creating delicious meals from family recipes for years and featuring them in her blog, The Barnyard Bistro. But now she’s sharing some of them exclusively with Great American Country! “The infamous sandwich that appears on every I Love This Bar & Grill menu across the country comes straight from a skillet in my Grannie’s kitchen,” says Krystal of “Toby’s Fried Bologna Sandwich.”
“It has always been my dad’s favorite sandwich, therefore naturally was going to be a feature on the menu at his restaurant chain,” she adds. “This isn’t your typical bologna sandwich. This griddle creation tops the list as the most ordered menu item at each and every I Love This Bar & Grill location. You’re gettin’ the original…straight from the horses mouth!”
8 slices Texas toast style bread
1.5 lbs bologna, sliced 1/2 to 3/4 inch thick
4 slices of American cheese (or 8 if you really like cheese)
Iceberg Lettuce (4-8 leaves)
1-2 tomatoes, sliced (you need 8 slices total)
BBQ sauce (Obviously we use Toby Keith’s BBQ Sauce *wink *wink)
Butter or Margarine
Heat a skillet or griddle over medium heat. Butter one side of each piece of Texas toast. Place the bread buttered-side down on the skillet and let brown. Remove when they are a medium golden brown and set aside. Place the bologna in the skillet and let brown for 3-4 minutes. Flip bologna over to brown the other side and place a piece (or two!) of cheese on top. Remove after 3-4 minutes.
To construct the sandwiches, place one piece of bread, toasted side down, on the plate. Add the bologna with cheese and drizzle with BBQ sauce. Place the lettuce and tomato and then top with another piece of Texas toast. Cut in 1/2 diagonally and enjoy!
