One Pan Nan: Open-Faced Tomato Sandwich

Every week on Top 20 Country Countdown our host, Nan Kelley, counts down your favorite videos — but when she’s away from the studio, she’s likely to be found in her kitchen, creating healthy, delicious meals. Nan likes to keep it simple, cooking entire meals using only one pan. Her husband, Charlie, lovingly gave her the nickname “One Pan Nan,” and now that’s also the name of her new cookbook [get it HERE!]. We asked Nan to share some of her recipes with us, and this week, it’s an Open-Faced Tomato Sandwich.

“My mother-in-law Patricia is a great cook. I love going over to her house for supper because I love her and her cooking. This little open-faced, cheesy-bacon-tomato delight is one of her longtime staples. Charlie grew up on a farm in Maryland and Miss Pat says, “I used to make this sandwich all the time for lunch on the farm, and the guys loved it.”  Me too, Miss Pat.  It’s perfect for this time of year when all those delicious homegrown tomatoes are coming in!”

Miss Pat’s Open-Faced-Tomato Sandwich

Ingredients:
English muffin
Blue Plate Mayonnaise (or your mayo of choice)
Basil, chopped
Tomatoes, sliced
Bacon bits
Salt and pepper, to taste
Provolone cheese slices

Instructions:
Split muffin open and broil for a few minutes until lightly toasted. Remove from oven, and top each half with mayonnaise, basil and sliced tomatoes. Sprinkle with bacon bits and salt and pepper to taste. Top each half with a slice of provolone cheese, and broil until cheese is melted and bubbly or light brown.
